
Shrimp Tacos
Ingredients (Makes 5 tacos)
1. Shrimp – 20 medium sized, peeled and deveined
2. Chilly powder – 1/2 tsp
Pepper powder – 1/4 tsp
Cumin powder – 1/4 tsp
Garlic powder – 1/4 tsp
Salt – As required to taste
3. Mayonnaise – 1/4 cup
Sour cream – 2 tbsp
Lime juice – 1/2 tsp
Garlic powder – 1 pinch
Salt -1 pinch
4. Cabbage – 1/2 cup, thinly sliced
5. Tomato salsa / Pico de gallo – 3/4 cup
6. Cotija cheese (or feta cheese/shredded cheddar) – 2 – 3 tbsp
7. Corn / flour taco-sized tortilla – 5
8. Lime wedges – To serve
Method
1. In a small bowl, combine mayonnaise, sour cream, lime juice, garlic powder and salt. Set aside.
2. Combine shrimp with all the ingredients numbered 2. Set aside for 15 minutes.
3. Heat 2 – 3 tsp oil in a cast iron pan over high heat. Add shrimp in two batches and sear on both sides. Cook 2 mts / side or until shrimp is completely cooked through.
4. Warm the tortilla in a pan. Top with sliced cabbage followed by 3 – 4 shrimp, tomato salsa, cheese and mayo sauce. Serve immediately.
